Eggs & Avocado for Breakfast!

This recipe was created on a whim.  One morning, I was looking for something to eat in lieu of the regular oatmeal or cereal. The avocados were staring at me on the table. Right there and then, I decided to boil some egg and voila…great breakfast that can easily be turned into dinner by adding chicken or a great steak.   Healthy and good for you!!!  Delicious…

Eggs & Avocado


  1. 4 hardboiled eggs
  2. 4 slices of avocado
  3. 1 tablespoon of Extra Virgin oil
  4. Salt and pepper to taste


To boil the eggs, place 4 eggs (room temperature) in a skillet and bring to a boil. This will take about 12 minutes. Remove from heat and transfer the eggs to a bowl of iced cold water (to stop the cooking process) and let sit for another 2 minutes.

While the eggs are boiling, peel and cut the avocado slices in big chunks or you can slice them thinly.

Peel the eggs and arrange with the avocado slices on a serving plate.

Drizzle with Xtra-Virgin Olive oil, salt, and pepper.

Serve with love – simple, heart healthy, and easy. This can be served as breakfast or lunch. Add a piece of chicken cutlet or steak would turn this into a very satisfying dinner.
