Polenta with Chipotle Shrimp

This recipe was created out of our love of Polenta in my home.  Polenta is a versatile accompaniment for chicken or seafood.  This is a great and yummy recipe. Any leftover Polenta can be used the next day by cutting them in strips and fried in a little bit of olive oil and sprinkle with parmesan cheese.  

Chipotle Shrimp (Makes 4 Servings)

Ingredients

  1. 2 cups of Polenta
  2. 4 cups of water (this can be substituted with milk)
  3. 1 tablespoon of Olive Oil
  4. ½ cup of Fontina cheese (grated)
  5. 1/3 cup of Parmesan cheese
  6. 1 teaspoon of Salt
  7. 1 teaspoon of freshly ground pepper
  8. 1 lb of Xtra-Large shrimps (cleaned and deveined)
  9. 2 chipotles in Adobo Sauce
  10. 1 large sweet onion
  11. 1 large red pepper
  12. 2 tablespoons of Olive Oil
  13. Salt, pepper to taste

Instructions

Add the olive oil in a skillet.Add the water and salt, then bring to a boil. Add the Polenta while whisking to avoid getting lumps in your polenta. Lower the heat and allow the polenta to cook. This take about 7-8 minutes. Add the fontina cheese and allow it to melt. Then, add the Parmesan cheese.

Taste and season, as desired.

Makes 4 servings. Serve with Shrimp Chipotle (recipe to follow)

Chipotle Shrimp

In a food processor, combine Chipotle, 1 tbspn of Olive Oil and puree. Pour puree over shrimp and let sit for about 15- 20 minutes.

Heat a skillet by adding 1 tablespoon of Olive Oil

Add the shrimp (without the puree), salt and pepper to taste and let brown for about 2-3 minutes on each side. Remove shrimps from pan and set aside. Return skillet to the fire, then add onions and pepper until the onions become translucent.Then add the puree and simmer for about 1 minute. Then add shrimp.

Pour over polenta and serve. yum, yum,yum
