dry polenta

This is probably the best, easiest polenta recipe I know. Create this as a staple in your dishes and combine with your choice of veggie or meat for a delicious, fast meal.


Servings: 4


  1. 2 cups of Polenta
  2. 4 cups of water (this can be substituted milk)
  3. 1 tablespoon of Olive Oil
  4. ½ cup of Fontina cheese (grated)
  5. 1/3 cup of Parmesan cheese
  6. 1 teaspoon of Salt
  7. 1 teaspoon of freshly ground pepper


In a skillet, add the olive oil

Add the water and salt

Bring to a boil

Then, add the Polenta, whisking the polenta at the same time to avoid getting lumps in

your polenta.

Lower the heat and allow the polenta to cook. This take about 7-8 minutes

Then, add the fontina cheese and allow it to melt

Then, add the Parmesan cheese

Taste and season, as desired. Tastes great with my Chipotle Shrimp.
